French Cookery Courses
In partnership with the nearby Restaurant Le Canyon, we are organising a hands-on French Christmas cookery course based at Le Domaine des Hallais this December. We invite you to join us in our beautiful and peaceful country surroundings to explore local gourmet treats, markets and sights in the mornings, and then create your evening menus each afternoon working alongside a professional chef in a restaurant kitchen.
French cuisine is justifiably world-famous but can seem dauntingly complex. Run by an experienced chef, these hands-on classes will de-mystify French cooking and give you the skills and experience necessary to make complete restaurant-quality meals, featuring classic French festive favourites, and to choose appropriate wines to accompany them. The programme also offers an opportunity to have a delightful and relaxing holiday in France, to do some Christmas shopping for unusual gifts, and to explore some of the culinary delights and tourist sights of the little known but easily accessible region of the Mayenne, an unspoilt rural French department famed for its beef and dairy products.
The five half-day classes will take place in the professional kitchen of the Restaurant Le Canyon, under the instruction of Chef Noël Tireau, who has worked for a number of French restaurants during his career, including the one at La Tour Montparnasse, the tallest building in Paris! All ingredients, materials and equipment are provided, together with a complete recipe file. The instruction will be given in French with translation provided.
Non-cooking participants are welcome and will be able to eat the same meals and participate in the morning excursions.
6-10 December 2009 French Christmas Cuisine
This 5-day course will focus on festive menus for the holiday season, including classics such as the French version of the "Yule log" cake. Excursions will include a visit to the Christmas market in Laval and a chocolate factory.
Price
The price include all the classes (if applicable), your accommodation, all excursions (final programme TBC), the welcome wine-tasting, and all your meals, including wine or cider, water and coffee with the evening meals, and wine with the Friday lunch.
